Structural design of zein-cellulose nanocrystals core–shell microparticles for delivery of curcumin

The novel core–shell microparticles were fabricated to deliver curcumin by using hydrophobic zein as the core and hydrophilic cellulose nanocrystals (CNCs) shell. Different concentrations (0.10–1.50%, w/v) of CNCs utilized regulate microstructure, physicochemical stability, in vitro digestion microparticles. size ranged from 1017.3 3663.7 nm. Electrostatic attraction interactions responsible for assembly zein-CNCs microstructure was dependent on level. retention rate increased 76.41% after UV radiation. Furthermore, rise level delayed release gastrointestinal tract reduced its bioaccessibility. potential utilizing nanoparticles explored stabilize through interparticle interactions, which useful develop application functional foods.
